As the Earth Hour approaches, Executive Sous Chef John Brock and his culinary team of Sigi’s Bar and Grill on the Beach (SBG) will be dishing up an “environmental friendly dish” for both local and international diners.

Diners will have the opportunity to savor Hungi BBQ. A Hungi, or Hangi is a New Zealand Maori cooking tradition brought to Penang for the very first time by Chef John.

Chef John and his culinary team with their Hungi BBQ!

Many of you may be asking now, what is a hungi?

A hangi (pronounced ‘hungee’) is a traditional New Zealand Maori method of cooking food using heated rocks buried in a pit oven that dates back to pre-European times, usually reserved for special occasions. Hangi, which means ‘supply of life’, are normally dug by Maori ira tane (men) as the Maori Wahine (women) aren’t allowed to take part in the preparation.

We attended the press conference of this Penang First Hungi BBQ at Sigi’s where we got to witnessed the unearthing of the food which was buried in the pit approximately three hours earlier by Chef John and his culinary team. The pit is located at the beachfront area of SBG measuring two metre by one meter with a depth of approximately two feet.

A variety of meat such as lamb and chicken, on addition to pumpkin and potatoes to carrots infused with rosemary and garlic, were entirely covered with banana leaves.

We headed back indoors to savor our meal! The meat and vegetable has a plethora of exciting tastes and aromas, with a wonderful earthly flavor. The taste is perfectly kept with the flavor of herbs penetrating into the meat.

I adore the lamb which was very tender, and amazingly not gamey! The juice from the lamb was oozing out as I took a bite! I like its aftertaste.

Dessert was also offered after the meal, and we savored the Tarte au Citron, the Classic Shortbread, Chocolate Tarte and the Mango and White Chocolate Bombe.

The foursome of sweetness was absolutely delicious.

This Saturday the 27th of March 2010, the Hungi BBQ will be served on the beach starting from 7pm. In conjunction with the Earth Hour which is between 8.30 pm to 9.30 pm, Sigi’s will run on partial lighting and air-conditioning.

This set dinner will cost RM45.00++ per person, and reservations are required! For the price, you can enjoy a set consisting of chicken and lamb, with vegetables to top it off! The meal is complete with coffee/tea and a mystery dessert!
