The newly opened six-storey The Fullerton Bay Hotel in Singapore is one of the most beautiful hotels I have visited around the nearby region. Prominently positioned in the heart of Singapore’s Central Business District and the arts and cultural precinct, The Fullerton Bay Hotel Singapore was officially opened on the 8th July 2010.

The luxury design hotel which caters to well-heeled travelers and jet-setters is the latest addition to the sparkling Marina Bay. Sitting on the prime waterfront location, the hotel offers breathtaking architecture alongside the stunning views of the Marina Bay and the Singapore skyline.

While I was in Singapore recently, I had the privilege to tour the hotel and its surroundings. The entrance to The Fullerton Bay Hotel is through the arrival lobby at the historic Clifford Pier, an important heritage. Two female door attendants dressed in smart white uniform, provided soft greeting while opening the doors. This is great hospitality and indeed a great change.

Walked pass the arrival lobby of Clifford Pier, which eventually leads to the Landing Point. This elegant indoor promenade paved in bespoke marble mosaics is The Fullerton Bay Hotel’s lounge du jour. It is designed by Asia’s highly sought-after design wunderkind Andre Fu. Further down the Landing Point is the reception lobby of the hotel.

The hotel has 100 guestrooms, five individually-themed suites and a luxurious Presidential Suite, all  individually themed to reflect the wealth of cultures in Singapore’s cosmopolitan population, including Chinese, Malay, Indian, Peranakan and Colonial. All the rooms are created by LCL Architects, the Hong Kong-based designers. We toured several beautifully decorated rooms in a variety of layouts.

The suites are located on the upper three storey’s of the hotel. We hop into the The Cavenagh Suite. With its tagline “Dive Into Pleasure”, this suite with elegant ambience is laden with luxurious decorations of paintings, crystal and fine porcelain. The suite is decorated with soothing colors of gold and cream.

Besides The Landing Point, The Fullerton Bay Hotel has two more signature dining destinations –  Clifford and Lantern. We dropped in for a meal at the richly decorated Clifford, which was complete with high floor-to-ceiling windows overlooking the sparkling waters of the bay.

While passing by into this brasserie, I cannot help admiring the right side window showcasing shelves of wines. Its wine library has an impressive 800-bottles of fine wine, prudently handpicked from all over the world.

Clifford offers an ala carte menu featuring a variety of French-inspired cuisine.  We had several delectable choices with exquisite flavors.

The waitress served up a basket of breads together with butter and the duck pate. I slathered on the pate which was delicious and it was indeed luxurious to have it served with a bread basket. Another sensational bite was the side dish of Truffles French Fries. Its texture and bite was simply scrumptious and the smell and taste was divine.

After having bites of the Truffles French Fries, we were served with the Watermelon compressed with basil tomato-avocado salad and lobster Tail $22. The dish was beautifully plated and was delicious with a great range of taste from the fresh vegetables to the juicy fruits.

Next up was the Dual Hokkaido sea scallop combined with the Boston lobster carpaccio, black truffles vinaigrette $28. The taste was wonderfully balanced with the vinaigrette.

I had the 3 hour Homemade Duck Confit with Truffle mashed Potatoes $38. It was done perfectly with a rich flavor, having gone through the long hours of preparation. The entire order with the duck together with the salad and piping hot potato was considerably too much for me.

Following closely at the serving of the duck was the Rack of Lamb and the wagyu. The lamb provencal with fine ratatouille and lamb shoulder samosa was served on the parsnip puree and meat jus $48. The lamb was tender and robust. The wagyu was the daily chef’s special.

We enjoyed the scrumptious dessert which was an apple tartare. Served hot off the pan, it has the sweetness and tartness, which contrast well with the cold creamy ice-cream and the toffee. I had a cup of coffee while my dining companions had the tea.

At the end of the meal, we sat back and enjoyed The Fullerton Bay Hotel renowned layer cake. It is a tradition for each of  The Fullerton Hotel outlets to serve this cake with a cup of coffee. Each bite of the layer cake filled with prunes was followed by a craving for another piece!

From Clifford, we made our way to the Lantern, located on the rooftop of the hotel. I was stunned by the lovely view when the elevator door opened. This stylish rooftop bar surrounds the hotel’s 25-metre rooftop swimming pool with a breathtaking view of the Lion City. We briefly walked through the place. The rooftop bar is a great place for a relaxing evening with the many modern cocktails conjured by the bar’s mixologist.

According to Mr Giovanni Viterale, General Manager of The Fullerton Bay Hotel Singapore,

“Lantern derives its name from Clifford Pier’s historical Chinese name – “Red Lantern Pier”. It was a landing point for Singapore’s first immigrants and red lanterns used to hang from the pier as a guide to seafarers.”
