The evening went on with guests exploring three French champagnes under the guidance of Mr. Shin Saito from Nicolas Feuillatte. He talked us through the Nicolas Feuillatte Reserve Exclusive Brut, Nicolas Feuillatte Reserve Exclusive Rose, and Nicolas Feuillatte Blanc de Noirs Millésime Champagne Grand Cru.
Both the Nicolas Feuillatte Reserve Exclusive Brut and the Nicolas Feuillatte Reserve Exclusive Rose with an ABV of 12.50% are made with a harmonious blend of chardonnay, pinot noir, and pinot meunier. The iconic “blue label” Nicolas Feuillatte Reserve Exclusive Brut with a higher percentage of chardonnay imparts more elegance and finesse whereas the Nicolas Feuillatte Reserve Exclusive Rose has lots more of fruitiness character, simply fragrant and appealing with delicate red fruit flavors.
The Nicolas Feuillatte Blanc de Noirs Millésime Champagne Grand Cru 2014 produced entirely from pinot noir sourced notably from grand cru vineyards has subtle fruit flavors and concentrated bouquet. This Blanc de Noirs style champagne holds well against food and cheeses with strong flavors, which I love.

Pairing with the champagne is a selection of canapes prepared by Executive Chef Ketut Gege Dodi and his team, and it includes freshly shucked oysters, caviar, to rillettes, roasted Australian beef striploin, fresh fruits and cheeses to finish off.
On the whole, it was an evening of cosy decadence, sharing sparkling moments together. Champagne Nicolas Feuillatte is a champagne worth raising a glass to and it is a joy being able to enjoy a glass every other day.
