Chin’s recently hosted the Mid-Autumn Festival Banquet in conjunction with CHAINE DES ROTISSEURS at its stylish and upscale waterfront restaurant in Penang. The lavish Chaîne dinner which took place on 22nd September 2010 was attended by distinguished guests of both culinary professionals and gastronomes.

It was a great pleasure being invited to this remarkable dinner. The evening began with a reception where everyone enjoyed a wonderful pre-dinner cocktail and the New Age Sparkling White (Argentinean) with an array of mooncakes.

The guests enjoyed a sumptuous night of cuisine and culture in a beautiful atmosphere. There was an abundance of food, combined with an amount of impeccable wines with series of old and new world wines from New Zealand, Chile, Australia, Argentina and South Africa.

Beside the above appetizers, we also enjoyed the 關東木耳 Delicate Tree Fungus, 燒椒皮蛋 Century Eggs In Grilled Red Pepper alongside with the 酸黃瓜醃牛肉捲Pickled Cucumber Beef Rolls! There were servings of Moet Chandon Brut Imperial, Whitecaps Sauv Blanc 09 (New Zealand), and Santa Ines Sauv Blanc 08 (Chilean) alongside with the appetizers.

The night’s printed menu declared that the specialties would be a choice of 紅燒極品鮑魚 Braised Premium Abalone (20gm) or the 桂花釀法國鵝肝 French Foie Gras with Laurel Blossom.

Dave never ceases to amaze his guests with new innovative creations. He introduced the foie gras, prepared in Chinese style. Most of the guests were satisfied with the taste and the fragrant creaminess. Considering that I had tasted the foie gras, I opted for the braised abalone and mushroom which was marvelously packed with flavor. The abalone was tender and I enjoyed while it was still warm.

The Rosedale Chook Shed Shiraz 08 (Australian) and Zilzie Select 23 Merlot 07 (Australian) were chosen to complement the  main dishes. I particularly enjoyed the 石鍋湘辣羊腿肉 Stone Bowl Hunan Leg of Lamb and the 常德醃魚 Chang De Cottage Fish, which was presented in an incredible tasty soy sauce with black bean.

The various main dishes we enjoyed that evening

On top of that, the guests mingled around, savoring many interesting single Malt whisky, including the Glenmorangie Original, Glenmorangie Quinta Ruban, Glenmorangie Lasanta and the Glenmorangie Nectar D’or. The citrussy Glemorangie Nectar D’or with a great finish was one of the favorite Glenmorangies for many at the table.

The dinner concluded with a touch of sweetness, with the serving of 沙琪瑪 Sha Ci Ma and the 南瓜豆沙餅 Pumpkin Cake With Sweetened Beans. I enjoyed the Sha Ci Ma which was light and crispy as it should be. Accompanying the dessert was the Dessert Wine, Simonsig Mustique 05 from South Africa, which proved to be an excellent accompaniment for the desserts.
